I bought my iMac in the summertime with a 2 year warranty. I want to switch it out for a 15 inch macbook. Is there a way for me to do this? Or would I have to revert to selling the iMac privately?

Warranties are just that, warranties. They cover manufacturer defects and "normal wear and tear" on the device. They are not a license for you to trade it in for a new one if you want something else.
There is currently no promotion for trading in old computers for store credit, so at this point, if you cannot afford to get a new computer in the style that you want, you will have to sell it privately.

Just to add to this, the service plan is transferable to the person you sell it to. Though I do believe you need the original reciept for that.
