This depends on your TV.
Many TVs (including mine) have an optical audio out. You can use the HDMI connection from the Playstation 3 to your TV directly and then the audio out from your TV to your audio system.
Whatever Home Theater system you get in the future will more than likely support HDMI so you should be set either way.

If your PS3 is up to date with its software, you can now use the optical out AND the hdmi out on the PS3 and hook the hdmi to the tv and the optical out to the home theatre system.
If you decide to use the optical out on the tv, 9 times out of 10 you will get digital stereo, and not digital surround.
They made this change in 2010 and is quite handy for those of us with older home theatre systems.
