No joke, one of my faves is the OST for the Will Ferrell movie "Semi Pro" complete with a song performed by Ferrell's character Jackie Moon entitled "Love me Sexy".
Oddly enough, the Love me Sexy song was actually remixed by Lil Wayne creating one of the oddest collaborations in music history.
The entire album is filled with 70s funk and soul that can't afford to be missed.

I absolutely love The Romeo and Juliet soundtrack. If you love it you should buy the Music Edition of the DVD because it has a documentary about how it was one of the first movies where popular artists were hired to write the music directly FOR the movie and the imagery in the movie was based around the popular music that was used.

I think the only one that I would add to this would be The Matrix movies. I was enthralled by the music from these movies. Don Davis' was an excellent choice for the composition of the orchestral music in the films, and when combined with Rob Dougan and Juno Reactor on Reloaded it took it to a whole new level for me. I was blown away enough to rush out and get the soundtracks for these movies, and I usually only pick up the soundtrack CDs from movies unless I'm quite enthralled by the music while viewing the film.
I also very much enjoyed the soundtrack from the latest Star Trek movie, as well as the Transformers movies.
And while I am at it, I need to mention a couple of video games here for awesome soundtracks:
1. The Legend of Zelda: Despite being mostly midi files instead of actual instruments, the soundtracks to this series goa long way to making it as strong of a series it is. I am continually blown away by the music from these games, and that alone is part of what keeps bringing me back to them again and again.
2. Gears of War: The soundtrack from both of these games was great, capturing the feel and different themes from each game (sense of urgency and desperation in Gears 1, and sense of confidence and hope in Gears 2). Much like the Zelda music, it is a big part of what keeps bringing me back to the campaign, despite having played through it numerous times.
3. Halo 3: ODST: I felt this game had a much stronger soundtrack than the other Halo games, and it really brought home the theme and environment that you were in as a character. It was like the idea was to make the music just as much a part of the game as the gameplay itself. While the soundtracks to the other Halo games are very nice, I never got anything more from it than the fact that it was in the background. the music from ODST felt a part of the game itself, and without it, the feel of the game just would not have been the same, at least for me.
Again, some excellent choices for soundtracks, and I hope to see more from people!
JB
