I would never recommend the GeForce 7300 for any kind of gaming. It's an entry level video card that's barely able tp properly run anything but very old 3D games... Unless minimum settings and slide shows are you things.
The recommendation made by roparadi is at least 5 times faster if not more when running video games. With it, you should be able to run Modern Warfare with High settings, even maximum maybe depending on your screen resolution or your tolerance for low frame rates.

Props on knowing your stuff. Just a note with the ATI Radeon 5000 series to make use of the third monitor capability you’re going to need a monitor with a Display Port (DP) or a rather pricey adapter for DP to HDMI or DVI that can supply power for it.
Note: as much as I love FS I find it has no big focus on any department (maybe TV's but still) if you are serious about gaming on the computer I would highly recommend a computer store like (competitor) and decide on a proper rig. They are able to build it for you as well.
