If you pre-order a game online, it will be shipped to you either on the release date, or as close to the release date as possible.
The only ways for you to have the game in your hands the day it is released are to either pre-order the game in-store (you would pick it up from the store you pre-ordered it from) or to go into the store on the release date and hope that it hasn't sold out by the time you get there.
Pre-ordering online does however, guarantee that you will get the game - you just won't have it in your hands the day it is released.
