It really depends on how big your music collection is and you can't forget the random chance that you'll become addicted to iPod Touch applications, which take up space too! I usually suggest going 32GB for the sake of future-proofing yourself; the iPods don't offer expandable memory, so it's either you go for 32GBs initially or you sell your 8GB at a loss later to get that extra space-- which I've done. If you have a fairly large music collection, go for 32GB and don't look back!
